This Junmai Daiginjo was brewed with premium sake rice “Aiyama” and polished to 35%.
Aiyama rice is difficult to grow and production is very limited.
This “Aiyama 35” was brewed with flower yeast and aged for 2 years at 2°C.
It gives elegant aroma, complex taste and good balance of umami and sweetness.
2,000 bottles limited production.
