Junmai Daiginjo sake brewed with “Yukimegami” which is newly developed sake rice in Yamagata in 2015. Production of rice is small and it is only used for making premiums sake, Junmai Daiginjo or Daiginjo. It was fermented for a longer period in cold winter and matured for a few months. It gives elegant aroma, smooth texture, and clear taste. This is a limited production’s sake collaborated with Tohoku University of Art and Design.
