Chiyokotobuki Toraya no Toranoko Junmai Daiginjo

The masterpiece from Chiyokotobuki Brewery. Brewed with Dewa sansan rice which is known as high quality sake rice only made in Yamagata.

Rice was polished to 40% with a very special way called “Henpei polishing” (Flat polishing) which maintains the original oblong shape of each grain (rather than rounding them out), then a higher percentage of fat is removed. This sake is also collected by “Fukurotsuri” which is naturally drip from suspended bags without any pressure. It requires extra time and skill and creates pure sake with limited quantity, 1000 bottles per year. This is the ultimate Junmai Daiginjo sake.
